Besides duck sauce chicken (nobody likes chicken on bone) any other uses for duck sauce? Or maybe with cutlets?

You can use duck sauce instead of apricot jam in any recipe. There's a recipe in the BY cookbook that I make often. It's a chicken cutlet with a slice of pastrami in the middle rolled up. Cover with an equal amount of mayo, ketchup, and duck sauce. I bake it on 350 uncovered for about 40 min.

I cut chicken breasts up into small pieces and coat them in half cup duck sauce that is mixed with 2 eggs and about half cup flour(might need abit more to make it stick to the chicken) then coat in mazo meal and fry. Comes out so yummy.

Makes a delicious dipping sauce for shnitzel.
Put some duck sauce in a bowl, add a dollop of mustard and another of teriyaki sauce. Combine. Delicious.

There is a really decadent appetizer that is delicious - but really a guilty pleasure.
Slice salami but not all the way and then spread with duck sauce and bake. I have a more specific recipe if you are interested.
Otherwise its best use is a condiment for an egg roll or you can use it to liven up cold chicken for a simple lunch - e.g. just dip the chicken in the sauce sparingly.
