Sunshine's Strawberry Crunch Ice Cream
with my changes

For the Crunch:
1 cup brown sugar
2 cups or 4 sticks margarine
4 C flour

Mix together slightly to form crumbs, bake in 9 by 13 deep pan until brown. Set aside.

Alternatively, you can crunch up vanilla or any plain cookie.

For the Ice Cream:
16 oz triangle whip
8 oz marshmallow creme
16 oz frozen strawberries

Beat the whip in a large bowl. (It takes at least 10 minutes.) When stiff, add your fluff and the defrosted strawberries.

Layer your crunch, ice cream, and the rest of the crunch in your 9 by 13 pan. Freeze.

I am confused about the crunch part. Do we bake it all? Or do we leave some for the topping?

I think you bake all the crunch and then layer it - put half under the ice cream and half on top of the ice cream.

I posted this recipe some time ago and it was made by chocolate moose and reposted.
Here is the original:

This one is not hard to make at all and a big hit in our house.
Strawberry Crunch Ice Cream

Crunch: 1 cup flour
1/4 cup brown sugar
1/2 cup melted margarine
Mix together until crumbly mixture forms
Bake on a cookie sheet for 20 minutes, stirring occasionally. Set aside

Ice Cream:
8 oz marshmallow fluff
1 16 oz container whipped topping
1 16 oz container frozen strawberries (defrosted and blended)

Whip up the topping until stiff and blend in the marshmallow fluff, mixing well. Add the strawberries and mix.
In a 9X13 layer crunch, ice cream, crunch and freeze. It's yummy!

I don't see why you can't make it for pesach. you just need tomodify the crunch prt.

sunshin, it wasn't enough crunch, that's why I quasdrupled the amounts. to tell yu the truth, I wouldn't hve m inded MORRE crunch, even ....

also, youdon't have to blend the fruit.

Try making it for Pesach using Lady Fingers instead of the crunch.

I wonder what would happen if I tried this with strawberry fluff. Do you think it would be too strawberry-ish?

I made it again today and it turned out gorgeous ; instead of the crunch, I used a large bag of crunched up sandwich cookies.

I had enough for 2 9 by 13's, with cookies left over.
