Anyone have a recipie for Roasted chicken?

preheat oven to around 400. If you want you can rub the chicken with a lemon (cut in half). This reduces the "chickeny" flavor. Then throw the lemon into the cavity. You can skip the lemon though and it will be fine. Then generously sprinkle with spices & rub them in with olive oil (1-2 Tbsp oil) all over the chicken. (I use gloves for that part). You can use almost any spices. I generally use salt, freshly ground pepper, paprika, a little ground coriander, garlic powder...) If you want you can also put cut-up veggies inthe bottom of the pan, like potatoes, carrots, sweet potatoes, onions. Add about a cup of water to the pan. Put it in the 400 degree oven for about 45 min to 1 hr, then reduce the heat to around 350 for another couple of hours. If you want you can baste it with the liquid from the bottom. If you want to check if its done poke it with a knife in the thigh and the juices should run clear. yum.

Sprinkle tons of garlic and spices liberally on both sides of whole chicken. Put a little water to cover the bottom of the pan. I cut up potatoes and sweet potatoes and put around the chicken and sprinkle with garlic.
Bake at 375 for 1 hour and turn the chicken and bake for another hour to 1 and half hours. YUM!

Zucchini also goes nicely with the veggies under the chicken.

why do you add water to the pan? I've roasted chicken exactly like you describe for years and have never added water.

Do you leave the chicken covered or uncovered for this recipe? Total cooking time is 2.5 hours? Do I leave skin on chicken or remove it? Which kind of spices do you use?

Roasting, by definition, is uncovered. I wouldn't skin a whole roasted chicken and I would turn the chicken halfway through the cooking process. You can use any spices you like, its pretty hard to ruin a roasted chicken.
