I have a slice of tilapia in my freezer. What can I make with it?
I tried deep frying it but the batter was too stiff and it baked into the metal net of the fryer and I had to cut up the whole fish to get it off.
Maybe someone has a better batter?

I use shake n' bake and just put it in the oven. Sprinkle some lemon juice on it as well.

Place talapia on baking sheet. spread a thick terriyaki sauce or hoisin sauce on it. Then cover with canned diced tomatoes. Bake at 350 for 25-30 minutes.

I usually put a thin layer of mayo and then dunk it in spicy bread crumbs- special for fish, I think the company Pereg makes it. And bake for 15/20 minutes.

How long do you bake this for that the potatoes are cooked enough and the fish isn't overcooked?

You can sauté onions, red pepper, green pepper and celery. Put mayonnaise on top of the tilapia, then pour sautéed veggie's and bake!

I do it w/o thelemon juice. aNd only some spices. It's quick, easy and delicious too:
2 lbs tilapia fillets
2 eggs, beaten
1/3 cup low-fat mayonnaise
1 teaspoon lemon juice
1 cup breadcrumbs
2/3-3/4 cup grated fresh parmesan cheese
1 teaspoon oregano
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/2 teaspoon thyme
1 tablespoon parsley
Spray baking pan(s) with nonstick cooking spray.
Preheat oven to 400.
Place beaten eggs in a shallow dish. Stir in mayo and lemon juice. Stir until well-combined.
In a seperate shallow dish, stir together breadcrumbs, parmesan cheese, and the herbs/spices. Mix well.
Dip each fillet into the egg/mayo/lemonjuice mixture (coat both sides). Let excess drip off, then dip into breadcrumb/cheese mixture to coat both sides. (OPT- sprinkle addtnl cheese on top)
Place coated fillets in prepared baking pan(s). Bake, uncovered at 400 for 20-30 minutes or until fish is white and flaky inside.
ENJOY!
