Anything that cooks quickly and doesn't feel heavy when eating.
Grilled chicken (white or dark) in wraps, over salad, or in a baguette.
Quick grilled burgers in buns with corn on the cob.
Kebabs (chicken, steak or ground beef).
Salmon over fresh pasta.
Pasta salad
Fresh green salad
Rice salad
Potato salad

we do a lot of wraps. Set it up like a buffet so the kids can choose the veggies they like, the condiments, etc.
Also a lot of grilled chicken, steak, and veggies so the heat isn't in the house.
Other than that, I'm not sure my menus change that much except no hot soup.
