really easy:
cut some onions (2 reg size) let saute at bottom of the pot
cut up a bunch of sweet potatoes -for like a 6 qt. pot I use like 4-5 big ones
cut up about 2 potatoes
put in the pot, fill with water till vegies are all covered
add spices, I usually put in salt, pepper, a teeny bit of chicken soup mix, basil, dill and parsley
bring to a boil and then let simmer until vegies are soft.
I usually blend it all then, but you dont have to
really yummy!!

thanks lst!
does anyone have a recipe with nutmeg and those types of spices? I know those spices can be used with sweet potato and it would be an interesting change.

Are you a stickler for amounts? If not just sprinkle some clove, nutmeg a pinch of cinnomen in with salt, pepper..You know the rest.
If you want a delicious but really unhealthy way of making it, whip some rich's whip and after you boil ( in water with spices like onion powder, black pepper and bit of salt)your sweet potato, carrot and onion blend the veggies and then add the whip with nutmeg, cloves, ginger and cinomen
.
Serve with some fresh parsley or croutons in the middle. Its really good.

thanks. I just wasn't sure if nutmeg, cinnamon and ginger went together with onions & black pepper since I think of them as "sweet" spices.
but you're saying I can just add them in without taking any of that stuff out.

A few months ago I was really in the mood of a sweet potato soup that was sweet, with cinnamon & nutmeg. I used this recipe as my inspiration, but I changed it quite a bit:

Here's how I did it: I peeled a few sweet potatoes, & cut them into cubes. I cooked until soft, and reserved a bit of the liquid. I added to taste: skim milk, a little bit of orange juice, vanilla sugar, maple syrup, cinnamon, & nutmeg. I blended the whole thing with an immersion blender, & adjusted the ingredients as necessary. It was delicious; I made it a few times.

I found this recipe on Cooks.com, it's really good.
1 med. onion, coursely chopped
2 med. sw. pot (approx. 1 1/4 lbs),peeled and diced
4 t. instant veg broth dissolved in 4 c. water
about 3/4 c. soy milk (recipe called for half and half)
freshly ground nutmeg (I used powdered)
salt and pepper
about 1 t. lemon juice
Place onion. potatoes, and veg. broth in large pot and bring to boil, reduce heat, cover and cook slowly until potatoes are soft, about 25 min.
Puree with hand blender until smooth, add soy milk and season. Add more soy milk to adjust consistency as desired.
