Ok, so yesterday was baked salmon (for those of you's who read my other post) and today's chicken cutlets. Now, instead of coming here tomorrow and complaining that my cutlets were dry, etc. I'm asking all great chefs here on advice how to make my chicken cutlets!! (No! it's NOT the first time I'm making supper... just need new ideas!)

So, any healthy, dietetic ways to enjoy my chicken cutlets tonight? And what side dish should I add to it?!??!

I've pan "fried" cutlets - just spray on both sides of cutlets with Pam, coat with spices - any you want, I used garlic powder, onion powder, paprika and pepper. Then put in pan for a few minutes on each side. Voila! Easy, quick and healthy. You can add rice, couscous, diced potatoes, anything. Yummy.

You could also dice it and put it in a salad.

THE BEST CHICKEN CUTLET RECIPE:

Marinate (can be 10 min, but longer=better) in 1/4 c. soy sauce, 1/4 c. oil, 1/4 c. honey. Coat in flavored bread crumbs. Bake covered, on 350, for 1/2 hr and then uncover for 10 min.

Someone I gave this recipe to had it posted in a school newspaper and said all the staff rave about it! I make it with roast pot/mashed potatoes with fried onions.

Ok, I just gave myself away to lots of ppl, but what the heck!!

I usually bread my chicken cutlets by dipping into duck sauce, honey mustard dressing, thousand island dressing, or any other sauce that's flavorful oni ts own. then, I bread with w/w bread crumbs or w/w matzoh meal, with either one I add lots of wheat germ.
I spray it with pam and bake for like 20 minutes, you can serve it with more sauce to dip into it.
I agree that these go great with mashed potatoes, which by the way I make healthy by putting in soy milk to make it fluffy instead of margarine.
sometimes I add roasted garlic to the mashed potatoes. (slice off the top 1/3rd of a head of garlic, spray open top with pam, wrap up in foil, bake at 350 for 1 hour. take it out and squeeze out the inside of each clove and mix into the potatoes)
you can also make fries either with reg. potatoes or sweet potatoes, slice up in sticks, spray with pam, sprinkle with salt and pepper, bake uncovered until crispy, at least an hour.
