Plain baked.
Sweet potato muffins. There was a GREAT recipe in a Mishpacha teen section a few months back.
Soup with butternut squash.
Binah, over the yom tov issue, had a hasselback butternut squash recipe. You can use the sauce over sweet potatoes. (I couldn't find pomegranate juice, though had I seeded the pomegranate...I used tart cherry juice.)
Sweet potato fries.

Sweet potato pie, recipe from Kids in the Kitchen.
We also really enjoy them sliced, baked in the oven with oil, salt, oregano. Either single layer for more crispy (with pam instead of oil) or lots together in one pan for softer.

Slice potato rounds or sticks and drizzle oil, sprinkle with salt and pepper and french fried onions. Bake uncovered on 375 for 1 hour or till soft inside. I often mix with white potatoes also.

Peel them, and then shred them when they are raw. Toss them in salads. You can make a big batch for the week, because they don't turn brown or dry out.

You can bake them, and then top them with garlic techina, and chopped cilantro.

Peel then and cube them, and toss in some teriyaki sauce. Sprinkle with sesame seeds and bake.

Add them to an orange soup.

Peel, chop, toss with salt, pepper, garlic
powder and olive oil and roast till crispy.

Wash skin, slice in half lengthwise (do not peel), rub open side with honey, smoked paprika and a drop of oil and bake spice side down on 400 for about 45 minutes (depends on size of sp). You can swap honey for maple syrup or add chili powder. It comes out amazing and looks pretty when served, too.

These were HEAVEN! So savory and so good. I wonder if you can put them in muffin tin as bake as mini kugels?

Mashed sweet potatoes also work if you have lots of caramelized onion.

Peel and cut into pieces.
Put into a baking pan.
Sprinkle a little salt, generous amount of garlic powder, a little onion powder. Put a drop of water in the bottom of the pan so it won’t stick. Cover and bake at 350 for around an hour.
I make this often. It’s really good and easy to prepare too.

Here's a fun, easy, and relatively healthy sweet potato dessert: bake sweet potatoes whole and unpeeled till soft, then while still hot, scoop out the flesh and put in a bowl with chocolate. Milk or bittersweet, whatever you prefer. Blend in a food processor or with an immersion blender till smooth and creamy (the hot potato will melt the chocolate). Eat as is or put in a readymade pie crust and chill. Or use as frosting on a cake.

Sweet Potato Kugel
From: Table for Two

2 MEDIUM SWEET POTATOES
1 EGG
1/3 CUP VEGETABLE OR CANOLA OIL
1/4 CUP SOY MILK - I think I used Orange juice
1/4 CUP SUGAR
1 TSP. VANILLA SUGAR


CRUMB TOPPING
3 GRAHAM CRACKERS, CRUSHED
1/4 CUP CHOPPED PECANS (OPTIONAL)
2 TBSP. LIGHT BROWN SUGAR
1/2 TSP. CINNAMON
2 TBSP. OIL

1. Fill a 3-4-quart pot with water and boil the sweet potatoes until they can be easily pierced with a fork (about 30 minutes). Allow the potatoes to cool slightly. then peel and mash.

2. Preheat oven to 350°. In a medium bowl, mix the sweet potatoes with the egg, oil, soy milk, and sugars. Pour into a greased 8-inch baking dish.

3. Combine all the ingredients for the topping in a small bowl. Mix together with your fingers until the cinnamon, sugar, and oil have been evenly distributed. Sprinkle the topping over the kugel and bake for 1 hour.
