Pepper-fest One-Pot Chicken and Cous-cous

oil, olive pref
chicken - either 2 lbs cutlets or 2-3 packages of chicken pieces
bag carrots, peeled & cut up - or use baby carrots
2- 4 onions, sliced
3-5 cloves garlic, minced
approx 3 cups water or broth
2 cups coucous, plain
1 cup raisins or craisins
1 cup slivered nuts
handful parsley or mint
black pepper, to taste

Brown your onions and put your chicken pieces in - if you're using cutlets, you can make it all in your frying pan. If it's pieces, brown each piece and put into large baking pan.

As you brown your chicken, add your carrots and garlic. After the last piece of chicken is browned and added to your baking pan, add your coucous, water or broth, raisins, nuts, and spices to the frying pan.

Let boil and add to your baking pan. Bake at 350 until down, about 45 minutes.
