This is for me and DH. The kids eat way earlier and they're not very interested in this dish anyway.
Cut up 2 chicken cutlets into nuggets. Marinate in equal parts soy sauce, bbq sauce, and mirin (I use cooking wine or white wine, depending on how lazy I am), and then sprinkle black pepper. Let marinate 10 min.
Then put oil in a pan and cook the chicken, about 90 sec per side. Remove from pan.
Add a touch more oil to pan, if needed. Saute an onion and garlic, with a little ginger powder until golden.
Add 1 C rice and 1.5 C chicken stock (I cheat and use soup mix) and the rest of the marinade for extra credit.
Place chicken on top, some frozen broccoli is optional but recommended. Cover and let boil. Then reduce to simmer until rice is cooked.
Monday was salmon stir fry with cabbage, pasta and peanut sauce
Tuesday was Chicken stir fry with the rest of the cabbage, zuchinni and peppers, brown rice and the rest of the peanut sauce
Wednesday was corn, pepper, white bean soup with cheese
Tonight is pizza bagels with whatever toppings the kids want.
I do prep and rally and make most of this on Sunday.
I've been roasting one or two veg at the beginning of the week and then we eat that with different mains all week, it cuts down on cooking time bc I only have to make one thing each night - this week veg was broccoli with salmon (monday), pasta (tuesday), schnitzel (wednesday), and tonight was pizza night

Some of my children help. I wish I could buy takeout or some readymade things, but we’re in a place with no other jews, so no kosher.
That must be hard. I find that I’ve been using a lot of ready made frozen food like pizza, knishes, fish sticks.. it’s things that my kids like eating and doesn’t take any effort on my part. Must be hard not to have any of those items available for quick fill ins.

It's all equal parts, I would say 3 Tb of each. Remember, it's for 2 portions. Multiply as you wish.
For the cooking wine, it really depends on what I have and/or is easiest for me to reach. If I feel extra energetic, I'll make a special trip to the dining room for white wine. Last night, I used red cooking wine. Sherry also works, but I couldn't bother to look for it. You can also use white cooking wine. Or mirin or sake, both of which I do not have.
Y'aoma hats off to you, to make everything from scratch! Definitely much harder, with no convenience food!
Can you share your chickpea burger recipe? is it like falafel balls? Also what is pizza bites?
The chickpea burger wasn’t that great, but it probably would have been a bit better if I fried it. I baked it. It was good with spicy mayo. I don’t remember which one I used. I googled it. They did not taste like falafel balls. It was more like a veggie burger, carrots, onions, etc..
Pizza bites is just pizza dough wrapped around cheese and sauce, bite sized.
For this week, I or my daughter will make bread and maybe sandwiches for lunch and leftovers for supper.
Monday lunch- tuna patties, salad, lentil and chard soup (never made it)
Monday supper- spaghetti and meatballs, salad
Tuesday lunch- bowl-rice chickpeas, roasted butternut squash, avocado, greens
Tuesday supper- salmon, broccoli, potatoes and onions
Wednesday lunch- quesadillas and have to make tortillas
Wednesday supper- chicken, farfel, salad
Thursday lunch- forgot about it
Thursday supper- penne a la vodka, sliced vegetables
Wow! do you make your own pasta & farfel too? you sound like you run a catering business.
My mom grew up like that with no kosher food & made everything from scratch. They had their own farm where they raised the cattle, chicken etc. & grew their own fruits & vegetables. Preserved jam/compote in summer time for entire winter. They were limited with only what grew there, don't think there were too many imports available. Kudos to you!
pizza bites you can roll out dough, fill and then roll up, cut into slices & lay flat, filling facing upwards & bake, instead of rolling each piece individually.
