Kids got to choose the past few nights for their first days of school. We had homemade sweet and sour chicken, spaghetti squid (hot dogs with spaghetti threaded inside) and Burgers/Salmon from the grocery store.

Tonight is my pick and we are having home made lentil burgers.

DD has been asking for spaghetti and meatballs and has agreed to help make them so I made the sauce with tons of veggies and she's busy making the meatballs.

this may sound gross but we barbecued on monday, and made tons of extra on purpose, so had leftover burgers and hot dogs last night and lkeftover chicken tonight. I know its wednesday

Its not gross. Most weeks I cook sunday for Monday, Tuesday and Wed dinners. Its a huge help to me.

Mashed potatoes with sauted onion and garlic

Grilled Italian chicken for kids who don't like orange veggies chicken

I hope it’s ok if I ask my question here - and bump this thread at the same time:

What’s your best recipe for one-pan rice and chicken dinner (baked in the oven)?

How much water does it need, so that it’s cooked through but not too liduidy?
Can you please include exact proportions of ingredients?
