On a cookie sheet, lay out cut up peppers in a line, purple onions in a line, and chicken breasts in a line. (Meaning, not all mixed together. Everything gets its own section on the pan). Drizzle olive oil over everything, and salt+pepper over the veggies.
Sprinkle taco seasoning on both sides of the chicken. Pour salsa over the chicken.
Bake on 400 for 25 min.
Cut up cutlets and put everything into a taco or tortilla.
(I also like to add guac and corn as toppings)

1. Send hubs to store for tilapia and frozen veg (cauliflower, carrots etc.)
2. Turn on over to 5:10 (that's probably 475 on other ppls ovens)
3. Chop an onion.
4. Put bandaid tightly on thumb.
5. Place onion on a (disposable) cookie sheet lined with parchment paper. Thrown in a couple mushrooms left in fridge. Drizzle w olive oil & put in oven.
6. Take another (disposable) cookie sheet & line w parchment.
7. Put on 1 cup GF crumbs (you can use others if you like).
8. Sprinkle well w paprika & onion powder. (You make like to add garlic powder, pepper etc).
9. Drizzle w olive oil & mix it all well w a disposable fork.
10. Wait for DH to get home.
11. Put 2 pkg veg on pan w onions. Realize it's too crowded, so divide among 2 pans. Now the fish will have to go in 2 9x13 bec otherwise no room in oven.
12. Spread 1/4 of the crumbs in each 9x13.
13. Rinse fish & pat dry.
14. Lay fish in 9x13's & sprinkle remaining crumbs on top.
15. Bake fish for 10-15 min. (Really I would eat it after 10 but DH prefers it more well done & I decided to wait & eat w him)
16. Serve veg as second course when they are nice & brown.

Of course if you managed to have the food in the house ahead of time you could do the veg 30-40 min & then you could even take it out & do fish on one cookie sheet. However DH managed to buy 1 pkg of v small pcs & one of large pcs so I was pretty sure they ought to have different cooking times. Or serve me the large piece & him the small pieces...

Well, that was my fun & exciting evening. How was yours?

Painful if I try to use it, I have it padded with several bandaids. Thanks for asking.

I should know better than to try to dice onions on less than 6 hours of sleep. Seems to me this has happened before...

my fun story today?!

Plan was on fleishigs. Was busy making mommy camp with my kids. Didn't realize it got so late, no time left to bake meat/ chicken. Kids had to get to bed early. Vacation over for the boys. Tommorrow they're changing over classes. So we made fast:

Fish sticks, frozen fries in oven, & cheese latkes.
