Haha, yeah we're having a bunch of single yeshiva boys over and they eat a lot plus two sleepover guests.
I'm also making meatballs even though it doesn't really go with the menu just because dh loves them, so they're really just for him (it's not shabbos to him without them). The roast is because I defrosted it so now I have to cook it, argh, but dh likes that too.
I think I have ended up with so much food because I start cooking what I can on Tuesday night so I think I jsut keep adding dishes to the menu since I "have the time" then once I write it down I feel obligated to make it.
Purple cabbage salad, KBD Holidays
garlic rosemary potatoes, Kosher Palette
pumpkin apple muffins, Kosher palette (don't remember if it's 1 or 2 and I think it's listed as a kugel but I make it muffin tins)
Mushroom chicken pastry cups- I adapted this form another recipe:
saute one onion in a little bit of margerine
add a can of mushrooms, diced
add shredded chicken, optional (I used soup chicken),
some salt and pepper, cook another few minutes,
add 2 tbl of flour, mix it in well
and then slowly add 1 cup of water and cook just a minute or two more until it turns into a thick sauce.
You can use this as a filling in puff pastry or buy and bake the puff pastry cups and fill those.
Cherry chicken is essentiall the one from KBD short on time (I think) I jsut use puff pastry squares and fill it with a mixture of 2 chicken breasts (cooked, diced) and a can of cherry pie filling and bake!

I agree..although I almost had a vegetarian come (she canceled tonight) so I was also going to make something that she could eat with protein (like puff pastry wrapped veggie dogs)

cranberry relish - bag of cranberries in saucepot - add little fresh lime juice, brown sugar, mandarine orange pieces, mango, ginger, fresh garlic ... hmmm - cook till cranberries burst and jelly like
have a little wine with dinner
dessert ... pumpkin pie (look at can of libby's solid pumpkin - not pie mix - and substitute condensed milk with less amount of richs pareve milk)
apple pie ... chocolate moose
and some nice flavored teas
(hint - I use the same pan with all the sauteed onion type things ... when finished food goes into aluminum disposeable to keep out of the way while cooking the rest - then later easily warmed up by throwing in oven 30 min before dinner)
then sleep it off all weekend or enjoy visiting family in between naps ... |
Can I come for Shabbos?

love ya ... didn't make anything yet (and I didn't even buy a turkey) ... come and we'll see what happens ... ain't nobody else coming ... but there's always booze ...
actually the pumpkin pie is in the oven ... the aroma ... mmmmmmmmm - heaven

I think so ... then it doesn't get soaked in oils but some may spray a little and still is yum (okay not as good as the fried)

I know hotzo'os Shabbos don't count, etc., but $6 a pineapple is a bit steep. Not to mention that then I have to cut it up and besides I have a sensitivity to fresh pineapple. I did consider it, though.

bashinda, I smear a drop of canola oil on the (skinned) chicken (thighs), cover it in flavored breadcrumbs, drizzle a bit more oil and then some honey.
Bake until it looks done.

I tried this with schnitzel but it dried out and was not appetizing. I thought I could add oilbut then again if so I might as well fry them (as I don't really use that much oil when I fry them)

yeah, it doesn't come out well for me with schnitzel either, in the oven. but with chicken thighs it comes out very nicely. it goes real quick too and I don't expect to have any leftovers.

I do it with boneless chicken breasts (don't pound them down) flour, eggs, flavored breadcrumbs ... I put a little olive oil on top after they cook a bit - to brown ... just don't over cook it ...

Ah. Mine weren't pounded but somewhat butterflyed.
Your food sounds delish. If I ever am able to visit my family in Cleveland I know where I'll be trying to crash on Shabbos.

another tip: bake on higher heat for shorter amount of time. that way it gets done without drying out.
