1 box large pasta shells (not jumbo), cooked & drained (I like gemelli pasta, but you can use any)
10 oz frozen spinach, defrosted 2 min in micro & squeezed out
15 oz ricotta cheese
2 garlic cloves, minced
1 egg
1/2 tsp salt
1/4 tsp pepper
2 cups marinara sauce, divided
4 oz shredded cheese
Spread 1 cup sauce in a greased pan. Set aside.
Combine spinach, ricotta, garlic, egg, salt, and pepper. Add rinsed pasta and mix well. Spread the mixture over the sauce in the pan.
Top with remaining 1 cup of marinara sauce. Sprinkle the shredded cheese last.
Bake uncovered in oven preheated to 350 until cheese is bubbly, around 30-35 minutes.
It was a random list of food I'd be in the mood of IF IT WERE kosher. Yeah.. I know fingerling potatoes and bread are kosher. It's the soup that pulls it all together for me...
I love that menu. Even a seafood bisque sounds delicious with that menu which is what mock lobster is.
I am debating with myself because I always feel bad if I go too fancy during the 9 days. But everyone around me seems to seriously step up their milchags.
I was going to say lobster bisque, fingerling potatoes, fresh french butter rolls, steamed asparagus and sliced Gouda for sharpness but then I saw the word "honest" in the title and that changed everything for me...😉
So, vegetable chicken patties, a pasta and broccoli.
I had vegan lobster at Buddha Bodai in Queens (maybe 2 decades ago) and it was good!
The shrimp was nasty.
