We had shnitzel and farfel.
Approximately equal amounts of brown sugar apricot jam and ketchup. Sometimes I add veggies and sometimes sesame seeds. I bake it covered and uncover for the last few minutes.
Freezer special lol. Have to shop for shabbos so probably frozen pizza.
With going back to work after having a baby I am going to try the free trial of Prep and Rally next week to see if it helps me be more organized with dinners. Lets see how it goes!

Tonight was tuna patties and rice with green beans. Ok so ran out of time...tuna patties turned into tuna mixed with mayo, spices, and a squeeze of lemon juice. (Hey the title does say "honest!") At least the kids and I happily ate it and my husband happily made something for himself.

Don't have an actual recipe. Sorry! They just kind of winged it lol. I'll post what they can remember.
They made sofrito first. Off the top of my head, I remember red peppers, green peppers, onions, cilantro, garlic, hot peppers (the mini ones) or sweet peppers. Put everything into a food processor or blender. You can have it either chunky or more liquidy. Your choice and optional.
For the empanadas
Puff pastry dough (store bought or homemade)
1 package of ground beef (or however much will feed your fam)
1 can of tomato sauce
seasoning A (cumin, oregano, ground coriander, onion powder, garlic powder, cilantro, ground annatto)
seasoning B (salt, pepper, garlic powder, oregano, turmeric)
3 tablespoons of the sofrito
1/2 of medium onion chopped small
1/2 cup of olive oil
2 tablespoons of garlic paste (optional)
Not sure how much seasoning they used
Put the pot on medium heat and add the oil, onions, sofrito, garlic paste, can of tomato sauce, and homemade seasoning B. Mix everything together.
Add the ground beef and mix it in.
Add seasoning B and some black pepper.
Cook meat until done.
When the meat is finished, put about 2 tablespoons of meat onto the pastry dough and fold it closed. Use your fingers to make sure the edges are really closed and then use your fork to press the edges.
In another pot, add oil on medium-high.
Fry the empanadas until they are golden brown and voila!
