ISO: Apple puff pastry recipe

I got 2 puff pastry sheets and I made deli rolls with one (it was practically in two pieces so I kept it that way and made two smallish rolls) and have one sheet left with nothing to do with it. I already made chocolate cookie bars so I figure if I made a "kokosh cake" like filling it would be too much chocolate (okay so really you can't have too much chocolate) and I'm wondering is there a simple way to use it with apples? I once made apple turnovers with apple pie filling and it wasn't so tasty. I remember it being pretty bland so I'm wary about trying that and I want to roll it up I think to make it easier.

Any suggestions?

not to roll up, but:
cut puffpastry into squares. peel, halve and core apples. lay half an apple, with cored side down, in middle of square. cut slits halfway through apple, glaze with apricot jam (slits are so jam gets absorbed into apple), sprinkle with sliced almonds if you want, roll edges of puff pastry around edge of apple (there shouldnt be too much left over, square is just slightly bigger than apple), and bake until pastry is golden and apple is soft.
serve individually.

p.s. next time, for apple turnovers that are not bland, add cinnamon and sugar to apple mixture, and after baking, drizzle a glaze with confectioners sugar mixed with water over pastry.

Ala the chef at Neve Yerushalayim (pays to help in the kitchen!):

Spread red jelly (strawberry, raspberry - whatever) on the puff pastry. Peel and slice apples, mix with cinnamon, pile onto the puff pastry and roll.

This is too fancy for mass production at Neve (if I recall) but if you like, you could brush with egg, and after baked & cooled sprinkle with confectioner's sugar.

Super simple and delicious. I made it up so it's not exact.

Peel, core and cut apples into small pieces. In a mixing bowl comine with sugar, cinnamon, dash of nutmeg and splash of lemon juice (don't make it too wet, but it adds great flavor). Mix to coat apples and taste. Amount of sugar depends on type and sweetness of apples used.

Cut puff patry into squares. Put a spoonful of mixture in square, fold up and seal. I do triangles and/or small rectangles. Make 2 or 3 slits on top. Brush w/egg wash and sprinkle with sugar. Bake till lightly golden.

You can add nuts, raisins, craisins or whatever. Also good with pears.
