Easy eggplant parm
Southern fried chicken for those that won't eat eggplant
Brussel sprouts with maple and balsamic
Rice

We won't be eating together.

Sure..it was pretty good, and really easy.

Crazy Crust Pizza

1 c flour
1 tsp salt
1 tsp Italian seasoning
Pinch of pepper
2 eggs
2/3 c milk
Pizza sauce, cheese, and toppings

Preheat oven to 425 and spray a rimmed cookie sheet
Mix together flour, salt, seasonings, eggs, and milk.
Spread out on pan, and then top with toppings (you can sauté veges first)
Bake for 20 minutes
Then spread sauce and cheese and bake 10-15 minutes until cheese bubbles

Today came home late.
First I made grilled cheese sandwiches, salad with shredded cheese, & gave kids yogurt.
Then I made stove top ziti, grilled frozen tuna steak, canned salmon salad & veggies. Sugar snap pea salad.
Everyone ate something else

Pita pizza,
Brown rice pasta - Ziti (or penne) with some tomato sauce concoction. And cheese. It tasted pretty good!! Iimssm. (If I May Say So Myself)

My ziti I did part reg macaroni & part made with brown rice pasta. Cook & mix it together then kids have no idea & don't see a difference

Baby arugula with roasted sweet potato, chopped walnuts and feta salad, dressed with a little balsamic vinegar and olive oil. Yummm
And some simple salmon.
