Update: it was delicious and so easy! I took the gnocchi out of the freezer about 15 minutes before baking. Yum!

I stopped posting on this thread cuz I mostly make the same things over and over again but I actually made some different foods this week!
Monday:
Choresh- Persian chicken in tomato sauce with eggplant and green beans

Tuesday:
Barley bean soup

Asian style zucchini
Wednesday:

Just use a potato masher! No big deal. But ricers are so perfect and cost very little, under $10 usually. I got mine at Marshalls years ago and picked up another one from there for pesach not too long ago. Just dont use an electric mixer - makes it gluey.

Cream of chicken soup
Originally it appeared in a Binah for pesach.
I didn't have the recipe now so I just did my own thing.
I sauteed one dice onion, then added 5 zucchini peeled & cubed, some garlic minced,
Till soft. Added chicken bones that were boiled in another pot & washed off with cold water. Add water till top. Let cook for 2-3 hours. It thickens & gets the chicken taste. ( because it's cooked for long time, it doesn't need flour or potatoes to get thickened) I add spices like salt pepper natural consomme. Remove chicken bones ( best in net so easy to remove but ok without too.) Handblend soup. Added 2 pckgs cutlets cut into pieces after handblended. Let cook another half hr till chicken bites are cooked thru. Enjoy!

Original recipe I think some zucchini peeled & some unpeeled. I think they also added in parsnip.
My 8qt pot of soup I made my version is gone, between yesterday & today. Everyone went for doubles

If you put bones in cloth bag or net then you don't need to boil it first. I didn't have net & didnt want it to leave off brown stuff into soup.

I seasoned the chicken cutlets and sauteed them in a mixture of butter flavored spectrum and olive oil. I used thin cut, but any should work.
I removed the cutlets and sauted shallots about 3 minutes. I added the sliced pears until they softened about another 3 minutes. I added brown sugar and balsamic vinegar and thyme. I added chicken broth and the cutlets and cooked until sauce thicken a little.
