I've tried sooo many rugelach recipes. its very hard to duplicate the bakery rugleach, especially since I won't use any margarine in my baking.
There are two that I like making, one is from the spice & spirit cookbook called cookie rugelach, the other I got out of a mishpacha magazine. They are both very good, The one from the magazine is with yeast. let me know if you are interested in margarine free rugelach & I'll post.

I just made a huge batch.
I used the recipe from the spice and spirit - I think it's called Classic. I just substituted the oil for margarine, Happy - and they came out yum! I personally think they tast (and look) really professional.
I have my own recipe for the filling though.
If you want it, NY21, I can try to figure out the amounts.

is it better to use margarine for oil ?I have that recipe book that you mentioned . I have something called buttery spread can I use that?
I just got back from the store and I have everything ready .
No Pms please - I cant keep track of them . \
I am going to start to bake now

I just made rugelach today - YUM - margarine free, but not a margarine free recipe. I use oil instead of margarine in almost everything.
Cake: 1 c. marg = 1 c. oil
Cookies: 1 c. marg = 7/8 c. oil
(I would put rugelach in the cookies category)

I used margarine and put to much in I am going to ad flour .

11 cups flour
1 1/2 cups canola oil
4 eggs
1 cup sugar
2 tbls vanilla sugar or vanilla extract
1 1/2 cups orange juice
5 1/2 tbls dry yeast with 1/2 cup warm water
put flour in mixing bowl, make well in middle, add eggs, sugars vanilla and oil. let the yeast bubble in a separate bowl with warm water.
and yeast to main bowl. knead in mixer and add orange juice as it mixes. knead 10 minutes until smooth. let rise an hour.
yeast doughs take time to make but the rugelach come out soft & yummy.
