Lemon Pie
from the can of Lucky Leaf Pie filling & my changes
1 22 oz can pie filling, any kind
3/4 cup soymilk or pareve creamer
2 T oil or margarine
2 egg yolks
2 egg whites, beaten until stiff
1/4 cup sugar
1 9 inch pie crust - bought , or make your own out of a ground uo 12 oz box of cookies (vanilla wafers or graham crackers or honey cookies are esp. good) & 8 or 9 inch pie shell, deep if possible
If making your own crust, grind the cookies and put half in a greased pie shell.
In very small bowl, beat your egg whites until stiff, gradually adding your sugar.
In separate, larger bowl, mix the pie filling, soymilk or creamer, and the egg yolks until blended. Add the egg whites.
Pour into your shell and cover with the rest of the crumbs. Bake about 30 minutes or until brown, at 350 deg. Makes about 8 servings.
