These are some recipes I had already typed up for a friend - if I find a copy of the rest, I'll post them at a later date. By the way, I only do easy things - enjoy:


Broccoli Salad

1 cup of mayonnaise (whipped)
¼ cup red wine vinegar
¼ cup sugar

raw broccoli
toasted cashews
green onions
craisins
-------------------------------------------------------------------------------
Corn and Red Pepper Salsa


1 bag of frozen corn (10 ounces) thawed
1 medium red pepper, cut in to ¼” dice
1 green onion, thinly sliced (I often omit)

Dressing:

Whisk together –
2 Tbsp fresh lime (I usually use 2 whole limes)
2 Tbsp chopped fresh cilantro (I usually use ½ bunch)
1 Tbsp olive oil (I often omit)
¼ tsp salt

Mix ingredients together, add dressing and enjoy.

Hearts of Palm Salad
- a big hit with guests

1 can hearts of palm cut into chunks
1 basket of cherry tomatoes – cut in half
1 bunch of asparagus – blanched
1 handful of fresh dill cut finely (or dried)
1 avocado - cubed

Dressing:
¼ cup olive oil
¼ cup rice vinegar
3-4 cloves of crushed garlic
pinch of sugar, pinch of salt
1 Tbsp Dijon mustard

Poppy Seed Salad

1 bag of broccoli slaw
1 bag of romaine lettuce
red onions
craisins
chow mein noodles (add last after dressing, just before serving)

Dressing:

½ cup mayonnaise
2 Tbsp cup rice vinegar
2 Tbsp brown sugar
¼ - 1/3 cup of poppy seeds

Taco Salad

2 heads of romaine lettuce
1 can of olives (slice)
½ red cabbage or purple onion
1 small can green chili chopped
3 tomatoes cut into cubes
2 avocados – diced


Dressing:

1 cup mayo
¼ cup ketchup
1/3 cup salsa

After mixing salad ingredients together and tossing with dressing, top with ½ bag of barbecue taco chips or tortilla chips

(Kids love this recipe – although I do not add the chilies or onion if I’m serving to little ones)

Technicolor Bean Salad


1 can each – chick peas
- red kidney beans
- black beans
Rinse beans and dry off as well as possible.
1 pound of fresh green beans, blanched
1 cup green onions

Garlic Dressing:

1 egg yolk
1/3 cup red wine vinegar
1 Tbsp sugar
4-5 cloves of garlic (minced in cuisinart before adding liquid ingredients)
1 cup olive oil (I usually only use ½ cup)

Combine with salt and pepper in food processor briefly. While motor is still running, slowly dribble in olive oil. Marinate at least 3 hours – overnight if possible.

Terra Cotta Chip Salad

1 bag of romaine lettuce
½ bag of spinach
½ red pepper – cut into thin strips
½ yellow pepper – cut into thin strips
1 avocado – cubed
1 6 oz bag slivered almonds – toasted (I throw in a big handful)
1 4 oz bag of pine nuts – toasted (I throw in a handful)

Dressing:

1/3 cup oil
1/3 cup rice vinegar
¼ cup sugar
3 Tbsp ketchup
2 Tbsp grated onion

Whisk dressing together and add to salad just before serving. Add crushed chips on top just before serving. This is a very attractive salad and works well for sheva brachas.

Tomato/Onion

tomatoes
1 small onion
drizzle with olive oil and salt

Cucumber Salad

6-10 cucumbers
1 small onion

slice above into thin strips

Dressing:

equal amounts of water, vinegar and sugar - depends on quantity made - I usually use 1/2 cup of each - Kids love this salad

Tomato/Cilentro

tomatoes cut into square pieces
cilentro chopped finely

splash heavily with rice vinegar (I use seasoned), a drizzle of olive oil, seasoned salt, and if you like it spicy, cayenne pepper

Hi cs - I am finally posting Wink
I am also big into salads and here are some of my favourites.

Bok-choy salad:

Bok-choy
Spring onions
Slivered/flaked almonds

Dressing -
2 tablespoons peanut butter
1 cup oil (I put one teaspoon and it's fine)
1/2 cup vinegar (I put 1/3)
1/2 sugar
1 tablespoon soy sauce
Crushed garlic

Just have to be careful how you make the dressing otherwise it comes out bitsy. Some people make it in the blender because of that. Personally, I put the peanutbutter in a container, pour the oil over it and mix it a tad just to make it a bit less thick, then add vinegar a tiny bit at a time, mixing after each bit to make sure smooth. The rest doesn't make probs. Enjoy

Corn salad:
Corn (Super sweet)
Red capsicum
Pickles

Dressing -
Mayonaise
Lemon juice
salt
pepper
sugar

Spinach leaf salad:
Spinach leaves
Sliced strawberries
Thin peices of apple
Peices of orange
Slivered/flaked almonds

Dressing -
Mayonaise
Orange juice
sugar
salt
pepper
herbamare

Brocolli salad 1:
Broccoli
Tomato
Purple onion

Dressing -
Same as above, or same as below.

Brocolli salad 2:
Brocolli
Purple onion
Cashews

Dressing -
1/3 cup mayonaise
1/3 cup vinegar
1/2 cup sugar
salt

Cabbage salad:
Cabbage
Toasted sesame seeds
Toasted slivered almonds
Toasted angle hair spaghetti

Dressing -
1/3 cup oil
1/3 cup vinegar
1/3 cup soy-sause
Sugar - quite a lot

CS and degoldy. I make alot of the same salads as you but with variations:

Taco Chip Salad

Head of Romaine Lettuce
2 Tomatoes ( sliced in half)
1 cup of Taco chips

Dressing:

Mayo
Salsa

Mix tamatoes and lettuce with dressing, put chips on top. Mix before sserving.

you can use amounts as you wish, I dont measure the mayo and salsa , I just put it and see the way it looks. the tamotes and lettuce should be coated, not too much nad not too little.

Spinach and Hearts of Palm salad ( from the kosher pallate, but I will write for those of you who dont have the book)

2 Bags fresh spinach ( baby spinach is easier to eat)
1 ( 15 ounce) can whole hearts of palm, drained
1 Pint cherry or grape tomatoes
2 Avocadoes ,pitted,peeled and diced.
10 ounces slice mushrooms
1/2 cup sliced almonds

Dressing
1/2 cup sugar
1 tsp salt
1/2 tsp dry mustard powder
1/2 tsp paprika
3/4 cup canola oil ( I use less)
1/2 cup white vinegar
1/2 cup ketchup
2 cloves garlic, chopped

Toss spinach, hearts of palm, tamotoes, avocadoes, mushrooms and almonds together in a large serving bowl.

Combine ingredients for dressing in a cruet or jar. Cover tightly ad shake vigorously.

To serve, tos with enough dressing to coat.

I ommit the avocadoes and mushrooms and it comes out good.

I had a couple over for Shabbos that is into very healthy food. I made up a menu with nutritous salads/dips/side dishes. Normally I cook healthy but usually Shabbos I will not be as healthy as during the week and use things like mayonaise and oil in my food where as during the week I hardly ever do. I also try to use reduced fat mayonaise or a least a mixture of that and the regular. I got many compliments on the healthy food and they appreciated the fact that I made the effort to make the healthy food for them. Now even more amaizing is that my husband liked it too. He will eat healthy but enjoys oil and mayonaise in food because he grew up with a mother that loves to cook(not healthy style) and fry everything. Now he does eat a lot of fruits and veg and isn't a nosher just likes fatty foods. I grew up with only once a year frying-latkes! So I was very happy that he liked the healthy food. I got inspired to make healthy Shabbos food from now on aws much as I can. Now I need ideas for more healthy recipes for salads/dips/side dishes. Anyone have any?

[b]chick pea salad:[/b]

2 cans chick peas
red onion
black olives
tomato (optional)

mix oil and salt, pepper, garlic and maybe a few drops of vinegar

[b]potato salad:[/b]

boil 5-8 potatoes (depending on hte size salad u want) u can boil with skin n peel after , cut into cubes
slice 1-2 pickles
mayonnaise, vinegar/pickle juice, salt, pepper

Rochel Leah this one's for you LOL

Spaggetti squash salad :
1 spaggetti squash cut in half remove pits & bake @ 30 min.
2 carrots shredded
1 red or green onion shredded
3 green onions diced

let the squash 1/2 cool then with a fork scrape out, so that it will look like strands, add all veggies together then dress with:

a little mayo or oil (whatever you prefer)
1 or 1/2 squeezed lemon
salt
pepper


Broccolli salad:

2 - 3 heads checked broccolli
1 red pepper sliced
1 yellow or orange pepper sliced
small tin of mardarines drained (reseve 1/4 of juice)
black olives
crasins
red onion sliced

dress with: lemon, salt, oil, a little pepper, mandarin juice
I like to add the crasins right before serving so they don't get mushy

sushi salad:this salad is nutricious and delicious,feel free to add sliced avocados in as well..mmmmm!

1 pkg sea weed(nori)
1 package of fake crab(either sticks or pieces)
1 red pepper diced
1/2 an english cucumber diced
3 carrots diced
1 1/2 ccup of sushi rice(cooked as directed on package)
2 teaspoons of wasabi powder and 2 tsp of water
1/3 c. rice vinegar
2 tbsp sugar
1 tsp salt
2 tsp grated ginger
black and white sesame seeds(optional)

-heat oven to 350 and bake a few sheets of nori until the color changes(should change to a gray/light green)
-place diced red peppers in boiling water for 2 mins and remove using slotted spoon.place carrots in water now,and boil for 3 mins.
-take rice and add vegetable to it(peppers,carrots,cucumber)
-chop up crab and add to salad
-mix the wasabi paste with water
-boil rice vinegar and sugar and salt and grated ginger.
-add wasabi paste into the rest of the dressing
-pour over salad.mix well to coat
-sprinkle with sesame seeds and crumbled nori

I have plenty of differnet salad recipes if u need any ideas please ask!

I made this salad this shabbos and it went down well
not sure of exact receipe amounts
brocoli
cherry tomotoes
spring onion
toasted seasame seeds
seame oil
salt and pepper
djon mustard
was delicous
you fry seasme seeds til they get brown

1 1/2 c cooked rice(I prefer brown)
1 c. salted cashew nuts
2 bags baby spinach
1/2 lb bean sprouts
1/2 golden raisins(optional but add a great texture and taste)
1 red pepper sliced
1/2 c. sliced mushrooms
a few green onions

dressing: make about an hr before so flavors can mix.
1/4 c. tamari or soya sauce
1/2 c. veg oil
2 cloves fresh garlic crushed/chopped
salt and pepper
mix together and let sit

pour onto salad b4 serving(this dressing makes a lot,just add a bit,and mix and then taste,u can always add more dressing but u can never take away...dressing keeps well in fridge)

I am looking for soime good salad recipes but nothing with nuts or fruit in it my husband thinks its klayim and he cant stand when people put fruit and nuts with veggies.

why does he think its klaim? who told him it is?

I dont know too much about klaim but I thought its about planting 2 diff types of seeds together. im not sure how planting would apply to your salad but its a funny thought. Very Happy
