What is your menu for the milchige meal on yom tov.? I don't know what to do. I like quick recipes.

1stimer, I have a freezer cheesecake and a frying pan cheesecake (with a great crust) which I usually make because I also don't have a milchig oven. I also like to make a pareve soup (usually onion or something like that) and I bring it to the table boiling hot and let people add shredded cheese directly into their bowls. Someone also just gave me a recipe for a blintz pie, an easier version of blintzes, although I haven't tried it yet. If any of these interst you, let me know. As for easy, it's always nice to have some bread with different flavored milchig soft cheeses to spread. But any cheese cake etc.. definitely takes at least a bit of time (although I try to stick to the least complicated possible).

My parents have a milchig seuda; so does my sister. Menu as follows:

Creamed mushrooms over toast
Lightly marinated salmon with tartar sauce
(vegetable soup) - this was cut out of the menu as unnecessary
Cheese and potato blintzes, cheese kreplach, quiche (or souffle, if you want it pareve), green salad
Coffee, cheesecake and milchig ice cream for dessert

OK, here it goes. I must add that none of these are too original but both are quite delish!

Tea biscuit cake (lots of versions exist)

filling:
2 lb. farmers cheese
one box instant pudding (choco. or vanilla work best)
2 TB sugar
2 tsp vanilla
1- 2 TB lemon

"crust"
1- 2 packages tea biscuits/ petie buerre
milk

assembly: Dip tea biscuits into milk until very slightly soft. Line the bottom of a 9 x 13 pan with crackers. On top of crackers, layer half of cheese mixture. Top with another layer of milk dipped crackers, another cheese layer and end with a layer of crackers.
Freeze overnight and then refrigerate until use.

optional chocolate coating:
5 TB cocoa
5TB water
6TB sugar
50 gm butter

melt first three ingredients. Remove from fire and add in butter. Pour on top of already frozen cake and refreeze until hardened.




Frying pan cheese cake

cheese mixture:
5 eggs
1 1/2 pounds farmers cheese (or in Israel 3 containers 5%)
1 cup sugar
1 box vanilla pudding (if none available use vanilla extract plus 1 TB flour or cornstarch)
1/4 cup lemon juice.

mix cheese mixture.

crust:
one package tea biscuits crushed into crumbs
optional- any ground nuts etc...
30 gm. butter which is about 1 oz.

melt butter in largeish frying pan. Add in biscuit crumbs and mix with butter. Mold it to the bottom and sides of the pan. Pour cheese mixture in the middle. Cook covered on a small flame for about one hour or until top puffs up and looks ready. Remove from fire and cool in pan. The top will fall again. This is my #1 goer on shavuos!!

BTW, in the second recipe, any soft cheese will do- doesn't have to be farmers cheese. Cottage cheese or other soft cheeses work just as well.

Cheese blintzes
Lasagna
Shallot mashed potatoes
Mushroom canape

Cream of tomato soup
Salmon in champagne sauce
Cheese latkes
Fandango salad.

Milchig are my favorite and also my specialty.

I make:
Tomato-Basil Soup
Greek Salad
Herb Salmon
Eggplant parmigana
Penna Ala Vodka (or Fettucini Alfredo)
Cheesecake, milchig ice cream

I also do not have a milchig oven, but I have a large toaster oven that I made sure could accommodate a lasagna pan and a springform pan (not at the same time though).

For those of you that want a baked cheesecake, you could always buy mini- springform pans (provided you have a milchig toaster oven).
