I have raw ready-made bourekas in the freezer. Will the top come out nice if I brush on the egg wash when it's still frozen? Should I defrost before brushing it on?

don't defrost. brush with egg and slide straight into the hot oven.

Thanks, oliveoil. I seem to remember getting an uneven glaze when doing that. Or maybe that was when I brushed with egg before freezing?
I can't afford to have these come out less than perfect as it's for a crowd, so please, if anyone has been there done that, please reassure me that they will come out alright.

Yes I like to thaw to the point where it's still cold but not soggy.
