I’m looking for some new tried and true salad recipes that are really yummy. Not looking for typical vegetable salad recipes with oil and spices. Looking for fancier ones with other yummy ingredients. Thanks!

Kani salad:

Romaine lettuce shredded
Seedless cucumber julienned
Avocado sliced
6-8 Kani ( mock crab sticks) defrosted, and pulled apart to form strings

Dressing:
Mayo
Small amount of sesame oil
Drop of sugar
Some rice vinegar
Small squirt sriracha sauce
Drop water
Mix well, pour over salad and mix well to incorporate.

Sorry, I don't have amounts, I made up the recipe and just eyeball everything

Broccoli Craisin Salad

Bag frozen broccoli florets defrosted and chopped into smaller pcs
Diced purple onion( I only dice about an 1/8 of an onion. I don't use the whole thing)
1/2 cup craisins
1/2 cup salted roasted cashews chopped in half

Dressing;
1/2 cup mayo
Tsp mustard
Sugar
Salt
Black pepper
White vinegar
Drop of water

Mix until smooth, pour over salad and mix very well. Better if this salad is dressed at least an hour before mealtime

Kohl Rabi Waldorf salad

Kohl Rabi cubed
Celery Thinly sliced
Cashew
dressing
Mayo
Lemon Juice
Sugar
Salt

Tapenade
Black olives drained very well
Capers
Mayo
Garlic
Process until desired chunkyness

Chick peas salad
1 can of chickpeas
4-5 Thinly sliced radishes
1/2 green, 1/2 red, 1/2 yellow peppers very thinly sliced the long way
dressing
Olive oil
Salt
Fresh garlic

Fennel Mandrine Salad
Thinly sliced Fennel
Can of Manderine oranges
dressing
Rice vinegar
Liquid from manderine can

Also looking for new salad ideas.

I make this corn salad that's always a hit and super easy.

2 cans of corn
4 hard boiled eggs
mayo
salt

Chop eggs the same size as the corn. Mix the corn and eggs with about a spoonful/2 spoonfuls of mayo and salt as desired.

1 eggplant diced
1 zucchini diced
1 box cherry tomatoes
4 Persian cucumbers
Bag or 1 head sliced romaine lettuce
1 bag mixed cheddar and mozzarella shredded cheese (I like haolam cuz it's very finely shredded)

Honey Mustard vinaigrette
3/4 c oil
1/4 c vinegar
3 Tbsp mustard
2 Tbsp honey
Garlic powder
Onion powder
Salt and pepper

Fry eggplant and zucchini, chop cucumbers, slice cherry tomatoes in half, tightly pack whole cherry tomatoes on a plate; place anther plate upside down on top of it. Slice through the space, voila easily sliced an entire box of tomatoes Smile

combine all veggies in a large bowl.

Combine dressing ingredients and pour over salad just before serving
