Can you use lemon juice or orange juice? Any citrus will give it a fresh, tangy zip.
Lemon with the cucumber, and orange with the beets. It will be yummy!

my cucumber salad has equal parts of lemon juice and water. (sugar, salt, onion)
I don't have a recipe for beet salad but I use lemon, garlic, salt, pepper and sugar.
