ASIAN NOODLE SALAD

This is not an authentic sesame noodle recipe but it's very good and easy.

The cookbook is interesting because, as the title suggests Very Happy, the recipes are all suitable for bringing to a potluck or if eating at home, are the kind of dishes that are easy to make and good for a not so fancy gathering. So many are tranportable and suitable for gathering or eating biffet style. . And don't have to be eaten immediately

ETA And obviously, like this salad, easy to scale up for a crowd.

ASIAN NOODLE SALAD

Excerpt From: Vollstedt, Maryana - The Big Book of Potluck

Asian flavors dominate this colorful pasta salad with julienned vegetables and a spicy peanut butter sauce.

SERVES 6 TO 8

8 ounces angel hair pasta, cooked as directed on package and drained
1 red bell pepper, julienned (see Note)
1 green bell pepper, julienned
1 small zucchini, unpeeled, julienned
8 green onions, including some tender green tops, cut on the diagonal into 1/2-inch slices
1 cup chopped fresh cilantro or parsley Peanut Butter Sauce (recipe follows)

Put pasta in a large, shallow bowl (for easier tossing). Add vegetables to pasta and toss thoroughly with sauce. Cover and refrigerate 2 hours. Serve cold or at room temperature.

Note: To julienne vegetables, cut them into matchstick strips.

PEANUT BUTTER SAUCE

1/3 cup warm water
1/4 cup creamy peanut butter
2 garlic cloves, minced
1/4 cup soy sauce
1/4 cup vegetable oil
2 tablespoons white wine vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
Combine all ingredients in a food processor and blend until smooth.

MAKES ABOUT 1 CUP

I've never tried with rice noodles. I don't see why it was uodnt work although rice noodles have a different texture and tastes ve never eaten them cold.

Is there some reason you want to use rice noodles. If you are gluten free, and would probably use a gluten free pasta which has more of the consistency of wheat pasta.

Of course, any recipe can be an inspiration or be tweaked

If you you make with rice noodles, post the results.

Not gluten free, I just really like rice noodles Smile

Looking to expand my recipes that have it as an ingredient
