I put a bunch of lettuce in a bowl. Strips of carrot and small chunks of cucumber. Chunked mango and avocado. Top with sushi rice (I make it by putting sushi rice, salt, and water into a pan, covered, and stick it in the oven, mix with a little rice vinegar when done.) Top with chunks of salmon. Sprinkle with french onions, and drizzle with spicy mayo.
Yum. Very filling for Shalosh Seudos and a crowd pleaser....

I don't use lettuce.
I make sushi rice according to package directions, let cool.
Mix rice with:
avocado, sliced
mango (if you like), julienned
cucumber, julienned
carrots, julienned
kani and/or salmon (I like kani), small pieces
nori (seaweed), torn up (add this right before serving)
I dress it with sweet soy sauce (boil equal amounts of sugar and soy sauce till sauce is thick, like 10-15 minutes), and I serve with spicy mayo, more sweet soy sauce, regular soy sauce, and wasabi so people can dress as they prefer.
You can put in anything you might find in a sushi roll.

I do similar to you agreer: Kani and/or salmon, avocado, mango all on equal size cubes, served over sushi rice. Drizzled with sweet sauce made with soy sauce, honey, ginger, and drizzled with spicy mayo.

So many variations. I'll have to try them out. I prepare sushi rice according to package directions. Mix mayo with teriyaki sauce and sugar. Mix the dressing with the rice. Put that in a bow. Top with shredded carrots, julienned cucumbers, chunks of avacado and diced kani. Drizzle sweet eel sauce over that. Then top with french's fried onions.

Here's the original recipe:
Rice
2 cups rice
¼ cup rice vinegar
2 tablespoons sugar
½ teaspoon salt
Cook Rice according to package directions.
Combine vinegar, sugar, and salt in a small saucepan and heat over low heat, stirring until dissolved. Set aside and allow to cool to room temperature.
In a shallow non-metallic bowl, sprinkle vinegar mixture over rise and gently stir until rice glistens. Cover with a tamp kitchen towel and cool.
Fish
1/3 cup mayonnaise
1 tablespoon sriracha hot sauce
hoisin sauce (optional)
dash cayenne pepper (optional)
bread crumbs
Mix ingredients and spread atop filets. Set aside remainder for secondary salad dressing. Bake fish at 350 for 10-20 minutes or until cooked through.
Salad
Lettuce
Cucumber
Avocado
Mango
1 cup rice crispies, baked at 350 for 5 minutes (optional if using panko)
Dressing
2 teaspoons wasabi powder
1 tablespoon mayonnaise
1 tablespoon soy sauce
1 teaspoon sesame oil
...
I follow everything except I usually just grill my salmon or leave it out. I also just use the following as my dressings: I make my own spicy mayo (mayo, srirarcha, soy sauce, sugar, salt), sweet soy sauce (boil down 2:1 soy sauce and brown sugar...watch it carefully), and use horseradish-mayo instead of wasabi b/c it's easier to find.
