I bought eggplants and wanted to make breaded eggplant roll-ups with rice inside and a mushroom sauce over it. no time for all that patchke now.
need ideas for what to make with eggplant. can be something meant to be eaten with bread, like an eggplant salad, but I want it to be plated and served, an actual dish- not like a dip.

Maybe do an eggplant bruschetta. Toasted baguette slices topped with a salad consisting of roasted cubed eggplant, halved cherry tomatoes, basil, red onion and/or garlic, balsamic vinegar, olive oil, s&p.
Or you can make moussaka (eggplant, ground meat, tomato and bechamel sauces...), or individual moussaka stacks.
Breaded eggplant rounds topped with piped mashed potatoes or rice & mushroom sauce.
