I have a pkge of ckn breasts and also a sweet potato. I also have rice. I want to make it in the oven, but not a recipe that involves bread crumb coating or anything like that.
any ideas?

Here I am, a vegetarian trying to offer you a creative suggestion for chicken. Well, let's see...
Why not marinade and bake the chicken. Serve baked or roasted sweet potato and rice (with the reserved juice from the chicken as a suace) as sides.
I just found these recipes online and want to try them for DH. Some call for chicken legs as opposed to breasts. I'm not sure if it makes a difference. Maybe you can play around with the flavors for ideas.
Orange Honey Garlic Chicken
1 (2 to 3 pound) whole chicken, cut into pieces
3 tablespoons soy sauce
2 tablespoons honey
1/4 cup orange juice
2 cloves crushed garlic
1/2 teaspoon dried oregano
1/4 teaspoon ground black pepper
1/2 teaspoon paprika
DIRECTIONS:
To Make Marinade: Combine the soy sauce, honey, orange juice, garlic, oregano, pepper and paprika. Mix all together and pour over chicken pieces. Refrigerate for 2 to 4 hours.
Preheat oven to 350 degrees F (175 degrees C).
Remove chicken from refrigerator. Place chicken and marinade in a 9x13 inch baking dish and bake, uncovered, in preheated oven for 1 1/2 hours. Baste once.
Greek Style Garlic Chicken Breast
4 skinless, boneless chicken breast halves
1 cup extra virgin olive oil
1 lemon, juiced
2 teaspoons crushed garlic
1 teaspoon salt
1 1/2 teaspoons black pepper
1/3 teaspoon paprika
DIRECTIONS:
Cut 3 slits in each chicken breast to allow marinade to penetrate. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, pepper, and paprika for about 30 seconds. Place chicken in a large bowl, and pour marinade over. Using your hands, work marinade into chicken. Cover, and refrigerate overnight.
Preheat grill for medium heat, and lightly oil grate.
Cook chicken on grill until meat is no longer pink and juices run clear.
Mediterranean Lemon Chicken
1 lemon
2 teaspoons dried oregano
3 cloves garlic, minced
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
6 chicken legs
DIRECTIONS:
Preheat oven to 425 degrees F (220 degrees C).
In a 9x13 inch baking dish, grate the peel from 1/2 the lemon, squeeze out the juice (about 1/4 cup) and add to peel with the oregano, garlic, oil, salt and pepper. Stir until mixed.
Remove skin from chicken pieces and discard. Coat chicken pieces with the lemon mixture and arrange, bone side up, in the baking dish. Cover dish and bake for 20 minutes. Turn and baste chicken.
Reduce heat to 400 degrees F (205 degrees C) and bake uncovered, basting every 10 minutes, for about 30 more minutes. Serve chicken with pan juices.

binah, thanks a ton. I did the greek one, just sliced swt pot on the bottom of the pan then the shnitzel pieces with the sauce and baked it. it came out good but too much oil. if you try it cut down on the oil.

Glad to hear the recipes were a success. Maybe I'll try one for shabbos. Btw, I found them at www.allrecipes.com. These all got great ratings, which is why I chose them, but they also have comments from other cooks. The comments are very useful. MosheDovidsMom, if I remember correctly many of the reviewers said to cut back on the oil. I forgot to mention that...

Pinapple juice sounds like it would go really well with the other flavors. But I'm not sure the combo of lemon juice-soya-honey sounds so good to me.
