Want to serve on Monday. Can I make it on Friday? Should I store it in fridge without dressing?

Probably ok without dressing. Any reason you don't want to chop the salad fresh on Monday?

If you need to make it ahead, add the olive oil and toss well before refrigerating. Do not add the vinegar and salt until you are ready to serve! You will need to let the salad warm up just a bit outside of the fridge to soften the olive oil - or you could just use regular salad oil that won't get hard when it's cold. Either way works.
It's still better to make it as close to serving time as possible.

Chop and store each vegetable separately in different baggies or containers. If one touches the other they start going during that length of time.
Dress before or prepare dressing in advance and store separately too.

No, it's only good for maybe 24 hours (and that's stretching it). Make it fresh (no problem on YT).
