here's my plan:
night:
challah, homemade
gefilte fish from a jar
tomato salad
tuna steak (anyone got a recipe that doesn't involve a grill?)
chicken soup with lukshen
roasted chicken
mashed potatoes
simple tzimmes (pretty much slightly sweetened baby carrots)
simple trifle: extra cake from my har sinai cake with rich's whip and syrup
day:
similar but no soup and probably cold cuts

Bas Hinda - try marinating and broiling the tuna steak. (perhaps half cover it so it doesn't dry out)
My DH likes to grill chick for both meals in the summer. He marinated the chick last night and will grill when he comes home today. Yum!
We'll eat the chick cold as a grilled chick salad for Shab lunch. Too bad the kids won't touch the grilled chick - they survive on hot dogs.

I really should get a broiling pan one of these days. Oh well. maybe I'll do it on the stove top. (my last place the oven came with the broiling pan and it fit in the bottom but this time the bottom of my oven is a storage drawer)
now to look for marinating recipes unless anyone has any good ideas? I'm thinking something with soy sauce.

Bashinda, Make a quick make a marinade with white cooking wine (or regular wine), soy sauce, toasted sesame oil, dash of pepper, dash of garlic powder. Don't ask me for proportions, I'm making it up as I go along.
A super easy one is to mix dry mush and dry onion soup mix with half the required water and 1/2 white cooking wine. I do this all the time. If you want to be fancy sautee some onions to add into it.
I wish someone would write a kosher cookbook with just sauces and marinades.

BasHInda, a broiling pan is nice for lettig the fat run off, but it's not a necessity. you can broil in a foil pan.

Chicken Kiev with honey mustard dip
Pumpkin Muffins
Endive Salad
Ice Cream Pie
Fruit
Shabbos lunch:
Same as Friday night but add cholent and take away chicken

I think we have the same thing every week with some variations in salads and kugels.
I'm having guests tomorrow night for the first time in a long time, I'm usually too tired Fri nights.

well - I bought the zuke specially for your kugel - which I wouldn't mind making just a half recipe of, to be perfectly honest.
do you just keep the uncut part in the fridge, for what you want it? not a lot is left!

I'm so unoriginal and totally traditional but here goes:
Whole wheat homemade Challah
Baked lemon Salmon and Gefilta Fish
Homemade and bought dips
Veg salad
Chkn soup with lokshen
baked mustered/mayo chkn
pot kugel
And dessert is fancy this week, courtesy of MIL (whose 3 kids are comin' for Shabbos) Ice Cream Trifle
