is there a diff in taste

I cook my fish on Thursday every week, sometimes even Wednesday. No problem there.

I can't imagine why it would taste different - unless you serve it warm.
And nothing lasts a week in the fridge

The difference is quite detectable. Fish cooked and packed into the fridge on Thursday will gel really well, in time for the meal. If you cook it on Friday, the sauce will be watery. P.S. I cook mine on Wednesday and we eat it through Monday of next week. My kids love it with tomato dip on the side. I make my own rolls and freeze them, for up to 5 months…

I always make my fish on thursday it is tastier on shabbos morning from sitting in the sauce I do not use it past monday though

Definitely can make it on Thursday - no diff in taste at all.
Btw, does anyone have a good recipe for gefilta fish with tomato sauce and veggies that's baked in the oven?

I just put the roll in a loaf pan (otherwise it spreads), and pour over it stir fried veg, any you want, mixed with tomato sauce and some basil, and bake.
I dont eat it, cuz I'm allergic to fish, but there's hardly ever any leftovers
