2 (15 ounce) cans garbanzo beans, drained and rinsed
2 (15 ounce) cans black beans, drained and rinsed
1/2 cup (packed) chopped fresh mint
1/2 cup (packed) chopped fresh parsley
1/2 cup chopped onion
1 pint grape tomatoes, halved
1 jalapeno pepper, finely chopped
1 clove garlic, minced
1/4 cup olive oil
3 tablespoons lemon juice
5 tablespoons apple cider vinegar
salt and ground black pepper to taste

In a salad bowl, lightly mix together the garbanzo beans, black beans, mint, parsley, onion, and grape tomatoes.
Place the jalapeno pepper, garlic, olive oil, lemon juice, and apple cider vinegar into a blender, and blend until thoroughly combined. Pour the dressing over the salad, and toss to mix; sprinkle with salt and black pepper to serve.

Ive been looking for vegan recipes and this seems like a very easy and tasty recipe.
Has anyone made anything like it?
Do I have to use fresh parsley and fresh mint?

I haven't made this, but I do make salads with fresh herbs. they are SO MUCH tastier than dried. and texturally more pleasing as well.

What do you mean by "bug status"? I wash and check them according to the CRC guidelines.

I just made this for dinner and it is delicious, Thank you.
next time I make it I would only use one of each can of beans . it's alot of beans.
then I could probably halve the dressing too.

I do something similar. My base is brown rice or barley. You can easily use #4 cracked wheat (same as tabbouleh) I add beans to complete the protein and celery or onions or green peppers if I have them on hand. Sometimes I just dress it with salsa, if I'm feeling in an Asian mood I make a dressing with sesame oil, miso, ginger and soy sauce, and sushi vinegar. Sometimes I'll add corn or sun dried tomatoes. I love to add chopped and bruised kale to it or swiss chard. (You can add fresh cabbage too.)
It's a good side and can be an excellent main dish for vegans.
