Batya's Tomato Dip - fresh and healthy
2 plum tomatoes - squishy ones are excellent for this
2 cloves garlic
salt and pepper to taste
olive oil - just to blend
Grind in small chopper or Magic Bullet. Mmmmm

you blend all ingredients until liquidly. that's it. it's a dip.

We make this every Shabbos!
The only difference is that we add the oil last, after all the other ingredients are mushed up. We drizzle in the oil and process for a minute or two so that the oil doesn't seperate from the tomato.
It is SO good on challah!

We also really like this! I add some lemon juice and balsamic vinegar and it really adds a lot of flavor...

I make mine pretty simular to shopmiami49. maybe its my meshugas but I like to use firm tomatoes in tomatoe dip I find it comes out much better. I use tomatoes, fresh garlic, salt, little dry basil (easier than fresh and still tastes great), pour oil in slowly, let it whip up in food procesor a bit (with "S" blade)- gives it great consistency, taste and color. njoy!

Ive heard that if you make it without vinegar it doesnt last in the fridge more than a day or two (it separates, etc) and adding vinegar supposedly helps. Im not sure what kind of vinegar or how much vinegar people use. Anyone know?

Place 2 overripe tomatoes and 2 garlic cloves in the food processor and process. Drizzle in the olive oil slowwwly (if you have a hard time with this, you can put a plastic cup of olive oil in the feeder with a tiny hole pierced on the bottom and let it drip on slowly) until thick and emulsified. Season.

Would cider vinegar kill it?
