anything I find is so complicated. anynoe have a tried and true easy recipe?

What I make is not exactly a shortcake; it's two layers of sponge cake, with whipped cream and strawberries in the middle and whipped cream on top.
My sponge cake recipe:
3 eggs, separated
1 cup sugar
1 cup flour
1 tsp. baking powder
1 tsp. vanilla extract
1/2 tsp. salt
1/4 cup water
Make a snow, add 1/4 c. sugar to snow. Beat yolks and sugar till light yellow, add rest of ingredients. Fold in snow. Bake in 2 layer cake pans @ 350° for app. 15 minutes till tester comes out dry. Cool on rack.
Slice strawberries, add 1-2 T. confectioners sugar and let stand ca. 15 minutes.
Whip one small topping, add a capful of vanilla extract.
Put cake together.

writing this from memory, 'icing' is not the correct word
Cake:
make sponge cake (spice and spirit has a good recipe)
either in a really tall round pan, or two shorter ones.
If you use the tall option, slice it in half width wise.
Icing: whip up 4 rich's whip with a package of vanilla pudding flavoring (I guess vanilla would do the same thing) or a package of mashed frozen strawberries (this makes the icing pink)
to assemble:
generously slather icing on top of first cake. place sliced strawberries on top.
put second cake on top of first one.
cover both cakes with icing
decorate top with sliced/whole strawberries

hey, Sarahd, we posted almost the same recipe
as to why mine has 4 cartons of whip, I have no idea.
maybe it's supposed to be 1??
now, any ideas for substitutions for the whip? Can't get that here

What is "make a snow" I asked that before but I still don't get it. Does it mean to whip the whites until stiff or not so stiff?

SSC is one of my easiest desserts!!!!
Yellow duncan heinz mix (not sure you can get them where you live)
I bake one big round bundt pan cake.
cut in half.
spread riches whip on bottom layer, and layer with sliced strawberries.
I then cover cake with top layer (remember you cut the cake in half horizontally) and sprinkle powdered sugar ontop.
real easy, but must keep cake refrigerated.

Whip the whites till you can stand a spoon in them.

dh loves strawberr short cake but I can't make it so well.
I have done the kind of cake from the packaged dough, and there is a recipe on the pkge to slice strawberries and defrost whip and assemble it.

I was once at someone's house that made a strawberry shortcake roll, it was delicious! she put angel foods cake on a long baking pan, and baked it, spread it with whip, put on strawberry and kiwi, rolled it, and decorated the outside with strawberrys and kiwis, I tried to do it, but it didn't "roll" so well, so I just ended it up cutting it into three layers, anyway it all tastes the same, but hers was so elegant.

I only have 9 x 13 pans to make cakes in. I also have a tube pan. what kind of strawberry short cake can I make in that size pan. should I split the sponge cake recipe into two 9x 13's then each one will be really thin, therefore it will come out good when layering????

Make it in 1 9x13 pan and cut cake in 1/2. each one about 9x6

I just made an strawberry ice cream roll.
made a jelly cake, made strawberry ice cream- whip dessert, blended frozen strawberries, rice dream and confec sugar,
and then I spread it on the jellyroll cake, and froze.
on shabbos I cut up astrawberries and garnish it.

I always make my SSC's in a tube pan. (it's a pretty one, however a tube no less...)
