Years ago, I once had a gefilte fish terrine with a layer of sliced carrots and a layer of spinach. It was not the typical recipe where the carrots and spinach are mixed into the fish. This was a distinct layer of sliced carrots and a layer of sautéed spinach. Anyone have a recipe like this? I'm tempted to experiment, but concerned that the carrots will fall out. Any ideas?

When I saw your title, the first thing that occurred to me was to form the loaf, then stab a whole carrot down the middle and cook it. When it's sliced, each slice will have a cute round carrot slice in the middle.
But that doesn't sound like what you're looking for.
