I know there is a recipe for chicken cutlet with cold cuts rolled in, does anyone have a recipe? I believe you bake it and I want to make sure it doesn't get dry.
Thanks!

heres what I have done, spread mayonnaise on both sides of the cutlets, roll one piece of pastrami in the cutlet, then dredge in cornflake crumbs, place in a greased pan seam side down, and pour French dressing over the cutlets, and bake uncovered at 375 (not sure how long)

I use mustard instead of mayonnaise, ads that zing. Also, I make it as a ‘knish’ with the chicken and pastrami inside. Then I roll the dough in duck sauce and then cornflake crumbs. Important, the cutlet should be cooked on both sides before using, because when you bake it, it only bakes the dough and it’s not enough for the chicken to get cooked thoroughly.
Freeze them unbaked, and bake it out whenever you want, it lasts for a very long time in the freezer.

I wish I knew how long it took but put it in for a 35 min and check on it. If it looks done take it out, if not keep chicking on it every 5 min

It's 20 minutes covered and 20 minutes uncovered.

I make this all the time.
Put cutlets into a bag with italian dressing, then shake them in a bag with breadcrumbs.
Roll the chicken cutlets around a piece of pastrami and secure with a toothpick. Drizzle some duck sauce on top and bake at 350, uncovered, for around a half hour.
