I bought a gorgeous maxi dress on sale, it looks like an evening dress (dark blue, lace top). I think it would make a lovely shabbos dress if it was knee length. I have two questions:
1. Would you wear a maxi dress for shabbos? Or is it too fancy?
2. Do you think there is a way of sewing it so it could be a convertible maxi/knee length dress?

yes, I wear maxi dresses on shabbos.
as for making it convertible, you could sew buttons on the inside of the waist. attach some loops to the hem of the dress. you can fasten the loops to the buttons to turn the skirt into a shorter bubble skirt. this depends on the texture of the skirt, though. I wouldn't do this with a layered look.
