Eggplant/sweet potatoes etc. in fresh salad

I am trying to figure out how to make those fresh salads that you can buy at a salad bar. So you can choose from many different veggies that are fresh, but there are quite a few that have more preparation than just dicing them up.
How do they make the eggplant?
How do they do the beets?

(sweet potato, I assume they bake with oil and salt.....Smile )

What other ideas do you have to throw into a salad?

Here are mine:

Lettuce (romaine/ iceberg)
tomatoes
cucumbers
peppers
purple onion
radish
stringbeans- fresh
bean sprouts
fresh parsley

proteins:
chickpeas
eggs
tuna
cheese

extras:
craisins
croutons

ANY other ideas???

The eggplant is fried.
The beets are roasted.

Thanks Ra mom, Anything to it, or just roast the beets with olive oil and salt and the same with the eggplant?
Any other ideas for foods I can add to the salads?

Terra stix
Feta cheese
Cubed cheese or shredded cheese
Smoked lox
Pine nuts
Hearts of palm
Baby corn
Corn niblets
Julienned carrots
Julienned beets (raw)
Sprouts
Bay spinach leaves
Mini pickled eggplants
Marinated artichokes
Jicama sticks

Scrub beets. Pat dry. Wrap each in foil. Place in baking pan to catch spills. Roast until done. When cool enough to handle pull off peels. Cut.

Slice eggplant. Salt. Let sit to drain water. Pat dry. Fry eggplant in oil.
