I have an extra bag of Dole coleslaw mix in my fridge that did not get used over yom tov. I want to use it before it goes bad, but not in the mood of coleslaw. Any suggestions?

unstuffed cabbage soup?
I often saute the cabbage bag with sesame seeds, sugar, ginger etc... I like it

I put cabbage in my chicken soup- I put it in one of those vegetable bags so the cabbage isnt floating around... it gives the soup a great flavor. and when I have extra coleslaw bags I put in the freezer to use for soup....

you can sauté it with onions and add to pasta
you can make soup with it
you can make eggrolls

Just make sure the bag is BPA-free.
I'd make eggrolls with it. Or use it inside pastrami bourekas - keeps the pastrami moist.

it's a a good thing I'm used to people making jokes at my expense. I know it was too tempting I meant the contents of the bag-not the actual bag.

You can also do unstuffed cabbage ...aka meatballs with cabbage at the bottom.

Besides for all the great ideas here, you can add it to vegetable soup, use it along with lettuce and veggies for a nish nash salad, make a sesame cabbage salad...
I too love cabbage and noodles and unstuffed cabbage in the crockpot.

Malawach cabbage rugelach! (Malawach dough cut in six, smear sauteed cabbage and onions, spiced with sugar, salt and black pepper. Roll up rugelach style. Smear duck sauce. Bake till golden)

You can freeze it and used in any cooked cabbage recipe - soup, sauteed, etc. - when you have time to think about it.

Saute an onion. Throw in cabbage. Stir occassionally until semi cooked. Add salt and black pepper to taste. Smear duck sauce on eggroll wrappers. Roll up and fry. Yummmm.
You can add shredded pastrami to the cabbage mixture before filling wrappers.
