I was looking for something I can make using dates for the simanim. Google kept coming up with dates wrapped in bacon. Can I make this pareve and use smoked salmon or will that taste nasty?
Alternatively any other date ideas?

I was gonna say that, too. That, or chop them up and add to fruit salad or honey cake. Please do not wrap them in smoked salmon! Salty fish does not marry well with sweet dried fruit.

I make couscous with carrots, ginger, and dates. It's delicious and I get two simanim in one dish.

Check out the thread about ROsh Hashanah menu for 2014. Many posters shared good ideas (and recipes) that included dates.
