In the May 28th Issue of Ami Living there is a picture of an Eggplant Feta salad that looks delicious. Unfortunately the page with the actual recipe is missing. It has oven fried eggplant, red onion, tomatoes, some sort of lettuce and feta cheese. Anyone has this recipe or something similar?

This salad was amazing. Everyone loved it. I made it on Shavous and every last drop was gone.
Eggplant Feta Salad.
3 -4 tbsp oil
1/2 eggplant cubed
1 (8 oz) bag romaine
1 cup cherry tomatoes, halved
1/2 red onion, diced
1 cucumber, peeled and diced
3 ounces cubed feta
Dressing:
3 Tbsp mayo
1/4 cup olive oil
1 tbsp parsley flakes
2 cloves garlic, crushed
1 Tbsp sugar
1/8 tsp salt
1/2 Tbsp mustard powder
1 Tbsp chopped scallions
1 Tbsp lemon juice
Preheat oven to 350. Coak a baking pan with oil. Add egplant and toss to coat. Bake 20 minutes, turning pieces halfway through to brown evenly (mine needed longer).
In large bowl combine lettuce, tomatoes, niion, cucumber, feta and hot eggplant (mine was cold because I made it in advance).
In a bowl mix dressing ingredients and toss with salad before serving.

I served it on a large platter in layers. Lettuce on the bottom, veggies on top, topped with eggplant and feta and drizzled on dressing. It was gorgeous and delicious. I really recommend it.
