My husband is on a diet and eats a lot of salads.
I usually prepare him a big salad the night before and he takes it before he leaves in the morning
I usually do like lettuce, cabbage, carrots and mix it together and I prepare chumus which he adds to it.
any other ideas of easy salads to make?
I have a food processor that I can use but I am looking for easy ideas so that I can give him more of a variation

carrot salad (you can add pineapple or apple)
cucumber salad (with onons or garlic and lemon juice)
waldorf salad (celery, green apples and walnuts)
lambs lettuce with goat cheese
...
Low callorie yummy dressings, that are easy and fast to prepare:
yoghurt dressing, (add spices, herbs...)
balsamic vinigar + olive oil
drop of canola oil or sunflower oil + hint of sugar/salt (you can substitute sugar with honey or even sweetnlow) low callorie yummy dressings, that are easy and fast to prepare
add nuts/ cranberries or croutons ( not too many , cos they are not super diet friendly) for a change, you dont want dh to get bored with his salads

* plain tomato salad (garnish with basil, pesto, sliced/chopped red onion, pickles)
* Israeli salad
* beetroot salad (either with orange sections, or with salad onion/cumin seeds. goes nicely with feta or goat cheese)
* cucumber salad (with dill)
* carrot salad (raw grated, either one with raisins/orange, or vinaigrete with chopped parsley)
* cooked carrot salad
* coleslaw
* red cabbage salad
* fennel salad (chop raw fennel, dress with vinaigrette)
* mushroom salad
* roasted pepper salad
* roasted butternut squash salad
* assortment of roasted veggies (zucchini, peppers, aubergines, red onions)
* bulghur salad, couscous salad, rice salad
* pasta salad, pasta tuna salad, pasta salad with shredded cheese
* chickpea salad, lentil salad, cannelloni bean (white bean) salad, aduki bean salad
* sweetcorn salad
* broad bean salad (fava beans in the US, I get fresh or frozen ones, not dried)
* artichoke salad (use frozen artichoke bottoms)
* hearts of palm salad (from tin)
* cauliflower salad (tiny florets, boiled al dente, add a dash of curry powder in dressing)
for something dipp-ey
* guacamole
* baba ganoush (skip mayo. just season with lemon juice, salt, oive oil, garnish with chopped red peppers, parsley and pine nuts)

I vote for the eggplant without mayo. I roast the eggplant on piece of silverfoil directly on the flame till soft. Then blend with peel on in food processor with salt and spices. Delicious!!
