ISO Recipe: Battered chicken with vegetables and a sauce

Anyone know of a recipe that you batter the chicken and then mix it with vegetables and some kind of sauce. Maybe something Chinese or something like sesame chicken with vegetables mixed in... I'm craving Smile

(I need a batter that doesn't use eggs)

This is a delicious and easy recipe. Coating the chicken in flour and then baking it in a sauce kind of makes it feel battered, but without the frying!

1 red pepper sliced
1 green pepper sliced
1 onion sliced
- fresh mushrooms sliced
- oil
2 chicken cutlets
- flour
¼ cup oil
¼ cup soy sauce
½ cup brown sugar
2 cloves garlic crushed
Place a little oil on bottom of a pan. Place in oven for a few minutes. Add vegetables to pan and return to oven for a few minutes.
Cut cutlets into nuggets. Coat in flour and add to pan.
Mix rest of ingredients for the sauce. Pour over chicken and vegetables and mix well. Bake covered at 350 degrees for 1 hour.

Yes, and they absorb the sweet sauce, especially the onions. It's just like a stir fry, except you can just dump it in the oven and forget about it, AND there are no pans to wash (That scores a million points IMO!)

do you think I can use this for chicken in the bone and just bake it for 2 hours instead of one?

Just the ingredients I have Smile Question, is it a thick sauce?

The sauce is not very thick, but definitely not watery like a vinaigrette either.
I've never tried it with chicken on the bone. I guess why not? Definitely up the baking time. Not sure if you would take the skins off.
