I'm completely ashkenaz myself, but I hear there's this Bukharian rice cholent called osh savo (or something of that sort) that has lamb and fruit which sounds so cool! Do you make it? Do you have a recipe for me?
(PS I'm actually making it for a gluten-free vegetarian, so no lamb would be good too )

Um, wouldn't that just be rice and fruit?
Try veggie broth, mushrooms, onions, and an assortment of dried fruit like raisins, apricots, mango, and apples. Let it stew for a very long time. Use seasonings like cumin, cinnamon, turmeric, and a bit of curry powder. Your kitchen will smell like heaven!
Make the rice in a rice steamer or pot, and keep it separate until the very last minute, or else the rice will disintegrate. Jasmine rice would probably be too sweet, but I'll bet Spanish or Basmati rice would be good. Definitely don't use Calrose, that would be a sticky mess! Brown rice would be healthy, but not very Sephardic. Plain old long grain white rice can be used, but it wouldn't be as good as Basmati.
