I accidently bought so many potatos and figure I will make them into soup this weekend. My question is, does it freeze well?

It is, but it freezes much better if you puree the soup first.

potato's as a rule doesn't freeze well...
maybe make potato blinzes, potato turnovers they freeze better than cubed potato

I have frozen both plain potato soup and tomato potato soup just fine.

I always freeze potato soup (non pureed) and it's fine. If you are very "makpid" on the texture of the potatoes, maybe it's not for you, but I don't even notice any difference.

I often make big batches of potato leek soup.Mostly pured but some kids like the chunks so I leave some. They will all eat it, & they are picky about what they will eat from the freezer.

I've frozen potato soup many times, never had a problem.
(recipe from purple lubavitch spice & spirit cookbook)
my soup is pureed btw....
