My husband only likes cooked salmon but I hate that I need to put in sugar for it to get a good taste. Anyone out there with a good tasty recipe please share!
TIA

Cooked in a pot?
Or is baked/broiled/steamed okay too?

There's absolutely no need to add sugar to get "good tastes".
I would simply season salmon fillets with salt and pepper, also dill (pref chopped fresh) and paprika.
Add a few tablespoon of dry white wine. Bake covered till cooked through.
This is good hot or cold, leftover can be used for salmon salad, salmon patties or with pasta.
I also like to use salmon for moroccan fish. (cover with matbucha, chopped salad onion and
chopped pickled lemon, bake in non-foil casserole).
For oriental-style, combine 2 parts orange juice to 1 part soy sauce and use as a marinade.
Add grated ginger if you'd like.
Also salmon is good for escaveche. If you get a really fresh, good quality salmon, you can
cure your own glavlax which is rather easy to do.

I make it in parchment paper with some spices and a couple slices of onion and zucchini- really moist and yummy, and fast- and no sugar!

I'm not sure why you think you need sugar on salmon.
I season my salmon with salt and a bit of garlic powder, top with chopped red peppers and onions, drizzle with lemon juice, then poach in red wine (or some kind of broth).
Or marinate in a bit of olive oil with salt, basil and lemon juice, then bake.
There are probably dozens of other ways as well.

We were invited out for Shabbat a few weeks ago & had morroccan fish. Dh and I agreed that it was exceptionally tasty (that's saying a lot, considering I don't usually eat or like fish).
I called up the wife and got the recipe. Made it last week for Shabbat, and it was devoured. So yummy & simple:
1. Marinate 5-6 pieces of salmon in vinegar for 20-30 min; then rinse well
2. Layer in pot: from bottom to top:
-coriander (as much as you'd like. I used 1/2 an Israeli pack)
-5 cloves garlic
-salmon
-1 T paprika & some salt – sprinkle on top
-pour olive oil all around twice
-lemon juice (optional)
-some coriander on top (optional)
3. Put lid on pot. Bring everything to a boil; then simmer for 20 min. If you like well done fish, cook for 25-30 min.
4. During cooking: check that there is some liquid in pot. If not, then add some oil or water.
5. When done, mix/spin pot from outside, so that sauce will be distributed on top of fish.
