I am looking for a recipe for carrot salad or something else that has shredded carrots, thanks

You can mix them into an ordinary lettuce salad, or make coleslaw, or make a carrot/raisin salad with a lemon juice based dressing.

Carrot salad
Shredded csrrot
oil
lemon or lime
S&P
You can also use them for carrot or in other soups like squash or to give a nice flavor to stews.

Eat as is.
Sprinkle over vegetable salads. Experiment with your taste.

I make a carrot, pineapple and orange juice salad. It is delicious.
A bags worth of shredded carrots, a containers worth of cut up (the size to your liking) pineapple and just pour as much orange juice as you like.
It is very refreshing.
