Roasted Salmon with Cucumber Dill Sauce
SALMON
1/3 cup dry white wine
1/3 cup orange juice
1/3 cup soy sauce
6 (6oz) salmon fillets, skin on
CUCUMBER DILL SAUCE
1 1/3 cups firmly packed, coarsely chopped fresh dill
1 cup 1/2 inch cubes unpeeled english hot house cucumber
1 1/2 tablespoons minced shallots
1/4 tsp cayenne red pepper
3/4 cup mayonnaise
3/4 cup sour cream or non dairy imitation sour cream, such as toffutti sour supreme
salt
ground black pepper
FOR SALMON:
Mix wine, orange jiuce and soy sauce in a 9x13x2 inch glass baking dish. Place salmon, flesh side down into the dish. Cover with plastic wrap and refrigerate 2 hours, turning occasionally.
Preheat the oven to 450. Discard marinade; place fish skin side down in baking dish. Roast salmon until fish is opaque in the center, about 14 minutes. Season with salt to taste. Transfer to plates.
FOR CUCUMBER DILL SAUCE
Blend dill, cucumber, shallot and cayenne red pepper in food processor until cucumber until cucumber is finely choppped; transfer to medium bowl. Whisk in mayo and sour cream. Season to taste with salt and ground black pepper. Serve with Salmon.
6 servings.
