I cooked gefilte fish on Erev R"H and still have some left. Can I cook it up in a sauce and serve it tonight for supper, or is it around too long?

As long as it wasn't put left out on the table for hours, or put in and out of the fridge a bunch of times, I think it is fine. Also, if you are recooking it (in the sauce), then it is almost for sure fine. Just make sure it doesn't smell or feel funny.
